OUR GRAPES ARE HAND HARVESTED AND STORED IN 200KG TANKS 

EACH BUSH IS PRUNED IN THE TRADITIONAL WAY. 

ALL GRAPES ARE SELECTED INDIVIDUALLY FROM 85 YEAR OLD VINES, EACH HAVING PROVIDED YIELDS OF UNDER 4500 KGS PER HECTARE. 

PRODUCTION POINTS: 

AFTER HARVESTING, THE GRAPES ARE IMMEDIATELY PUT INTO COLD STORAGE AT 4oC WHICH REDUCES OXIDATION.  THEY ARE THEN CRUSHED, WITH THEIR SKINS, FOR 24 HOURS.  THIS IS FOLLOWED BY FERMENTATION IN FRENCH OAK BARRELS AT A TEMPERATURE OF 14-16oC FOR AT LEAST 20 DAYS. THE LEES, OR SEDIMENT, IS STIRRED REGULARLY WEEKLY FOR 10 MONTHS. THIS SETTLES TEXTURE AND COMPLEXITY BACK INTO THE LIQUID. IT ALSO ENHANCES THE AROMA, FLAVOUR AND TASTE.

WITH A FINE, REFRESHING ACIDITY, THIS WINE PAIRS WELL WITH STRONG CHEESE, SMOKED PRODUCTS AND POULTRY.
